Ingredients:
- 12 oz spaghetti
- 2 cups cooked chicken, shredded
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10 oz) Ro-Tel tomatoes and green chilies, undrained
- 1 cup chicken broth
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 tsp chili powder
- 1/2 tsp cayenne pepper (optional, for extra spice)
- Salt and pepper to taste
Directions:
- Preheat your oven to 350°F (175°C).
- Cook the spaghetti according to the package instructions. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the diced onion and bell pepper, and cook until softened, about 5 minutes. Add the minced garlic and cook for another 1 minute.
- Stir in the shredded chicken, cream of chicken soup, cream of mushroom soup, Ro-Tel tomatoes, chicken broth, and sour cream. Mix until well combined.
- Add the chili powder, cayenne pepper (if using), salt, and pepper. Stir to combine.
- Gradually add the cooked spaghetti to the mixture, stirring to coat the pasta evenly with the sauce.
- Pour half of the spaghetti mixture into a greased 9×13 inch baking dish. Sprinkle with half of the cheddar and mozzarella cheese.
- Add the remaining spaghetti mixture on top and sprinkle with the remaining cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it sit for a few minutes before serving.
