Ingredients

  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon hot sauce (adjust to taste)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)
  • Crackers, bread, or vegetables for serving

Directions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the chopped shrimp and cook until they turn pink and opaque, about 3-4 minutes. Remove the shrimp from the skillet and set aside.
  3. Sauté Vegetables: In the same skillet, add the finely chopped onion, minced garlic, and red bell pepper. Sauté until the vegetables are soft and fragrant, about 5 minutes.
  4. Mix the Dip: In a large mixing bowl, combine the cooked shrimp, sautéed vegetables, mayonnaise, sour cream, shredded Monterey Jack cheese, shredded cheddar cheese, diced tomatoes with green chilies, Cajun seasoning, hot sauce, smoked paprika, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
  5. Bake the Dip: Transfer the mixture to a baking dish and spread it out evenly. Bake in the preheated oven for 20-25 minutes, or until the dip is bubbly and golden brown on top.
