Kitchen Equipment Needed:

  • Mixing bowl
  • Skillet or frying pan
  • Slotted spoon or spatula
  • Paper towels
  • Plate or wire rack for draining

Ingredients:

  • 2 cups fresh or frozen corn kernels (thawed if frozen)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup finely chopped green onions
  • 1 large egg, beaten
  • 1/4 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil, for frying

Directions:

  1. In a mixing bowl, combine the corn kernels, all-purpose flour, cornmeal, chopped green onions, beaten egg, milk, baking powder, salt, and black pepper. Stir until well combined, ensuring the mixture has a thick batter-like consistency.
  2. Heat vegetable oil in a skillet or frying pan over medium-high heat until it reaches about 350°F (180°C).
  3. Using a spoon or your hands, carefully drop spoonfuls of the corn batter into the hot oil, shaping them into small patties. Make sure not to overcrowd the skillet, allowing space for the fritters to cook evenly.
  4. Fry the corn fritters for 2-3 minutes on each side, or until they are golden brown and crispy. Use a slotted spoon or spatula to carefully flip them halfway through cooking.
