Directions:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced onions and cook for 5-7 minutes, or until they are soft and caramelized.
  4. Add the minced garlic, dried thyme, and dried oregano to the skillet. Cook for an additional 1-2 minutes, until the garlic is fragrant.
  5. Pour in the chicken broth, stirring to deglaze the pan and scrape up any browned bits from the bottom.
  6. Reduce the heat to medium-low and stir in the heavy cream and Dijon mustard. Cook for 2-3 minutes, until the sauce is slightly thickened.
  7. Return the chicken breasts to the skillet, spooning the onion sauce over the top. Cook for an additional 2-3 minutes, until the chicken is heated through and coated in the sauce.
  8. Remove the skillet from the heat and garnish with fresh chopped parsley, if desired.
