Skillet Banana Fritters are a delightfully crispy and fluffy treat that’s filled with the natural sweetness of ripe bananas. They’re not heavy or overly sweet either. I think they’re a perfect breakfast or snack option, and if you’re not a fan of bananas, feel free to substitute with another fruit.

It will still be undeniably delicious! If you’re looking for a light and airy treat that’s not overly sweet, you’ve come to the right place. When you make a light and crispy fritter and pair it with the natural sweetness of bananas, you get the perfect bite. The addition of a touch of cinnamon just sends it over the top. I’ve really been in the mood for something cozy and this delightful fritter reminds me of comfort food at its best. Not a fan of bananas? Don’t worry, it’s still delicious with another fruit.

Ingredients:

  • 3 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder

  • 1 large egg, beaten
  • 1/4 cup milk

Directions:

  1. Prepare the Batter: In a mixing bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, and salt.
  2. Combine Wet Ingredients: In another bowl, combine the mashed bananas, beaten egg, milk, and vanilla extract. Mix until well combined.
  3. Mix the Batter: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  4. Heat the Skillet: Heat about 1/4 inch of vegetable oil in a skillet over medium heat until hot but not smoking.
  5. Fry the Fritters: Drop spoonfuls of batter into the hot oil, flattening slightly with the back of the spoon. Fry until golden brown, about 2-3 minutes per side. Transfer to a plate lined with paper towels to drain excess oil.
  6. Serve: Dust the fritters with powdered sugar before serving. Enjoy warm.
