Shrimp Lo Mein is a delightfully flavorful dish that’s packed with tender shrimp, vibrant vegetables, and savory noodles. It’s not heavy or overly salty either. I think it’s a perfect weeknight dinner or quick meal, and if you’re not a fan of shrimp, feel free to substitute it with chicken or tofu.

"Created by AI, this recipe combines technology and taste for a modern twist on home cooking."

It will still be undeniably delicious! If you’re looking for a light & flavorful dish that’s not overly complex, you’ve come to the right place. When you combine succulent shrimp with fresh veggies and perfectly cooked noodles, you get the perfect meal. The addition of a savory sauce just sends it over the top. Kitchen Equipment Needed:

  • Large pot
  • Large skillet or wok
  • Mixing bowl
  • Whisk
  • Tongs
  • Cutting board
  • Knife
  • Colander

Ingredients:

Lo Mein:

  • 8 oz lo mein noodles (or spaghetti)
  • 1 lb shrimp, peeled and deveined
  • 1 red bell pepper, julienned
  • 1 cup snow peas
  • 1 cup shredded carrots
  • 1/2 cup sliced green onions
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons vegetable oil

Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/4 cup chicken or vegetable broth

Directions:

  1. Cook the Noodles:
    • Bring a large pot of salted water to a boil. Add the lo mein noodles and cook according to the package instructions until al dente. Drain and set aside.
  2. Prepare the Sauce:
    • In a mixing bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and chicken or vegetable broth until well combined. Set aside.
  3. Cook the Shrimp:
    • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  4. Sauté the Vegetables:
    • In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, and sauté until fragrant, about 30 seconds. Add the red bell pepper, snow peas, shredded carrots, and sliced green onions. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Combine and Toss:
    • Return the cooked shrimp to the skillet with the vegetables. Add the cooked noodles and pour the prepared sauce over the top. Toss everything together until well combined and heated through, about 2-3 minutes.
  6. Serve:
    • Serve the Shrimp Lo Mein immediately, garnished with additional sliced green onions if desired.

Enjoy:

This Shrimp Lo Mein is a quick and delicious meal that’s perfect for any night of the week. The combination of tender shrimp, fresh vegetables, and savory noodles is simply irresistible! Enjoy the fresh and flavorful taste of this homemade dish.
