Crispy on the outside and fluffy on the inside, these seasoned baked potato wedges are an easy and flavorful side dish perfect for any meal.

Ingredients

  • 4 large russet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Prepare the Potatoes
    Preheat your oven to 400°F (200°C). Wash and scrub the potatoes thoroughly. Cut each potato into 8 wedges by halving it lengthwise and then cutting each half into four slices.
  2. Season the Potatoes
    Place the potato wedges in a large bowl. Drizzle with olive oil and toss to coat evenly. In a small bowl, mix together the garlic powder, onion powder, smoked paprika, oregano, thyme, salt, pepper, and cayenne (if using). Sprinkle the seasoning mixture over the potato wedges and toss until well coated.
  3. Bake the Wedges
    Arrange the seasoned potato wedges on a baking sheet lined with parchment paper or lightly greased to prevent sticking. Make sure the wedges are spaced out in a single layer to ensure even cooking.
  4. Cook to Perfection
    Bake in the preheated oven for 35-40 minutes, flipping the wedges halfway through, until they are golden brown and crispy on the outside.
  5. Garnish and Serve
    Remove the wedges from the oven and sprinkle with fresh parsley if desired. Serve immediately with your favorite dipping sauce, such as ketchup, ranch, or garlic aioli.

Tips for Best Results

  • For extra crispiness, soak the potato wedges in cold water for 30 minutes before seasoning to remove excess starch. Dry thoroughly before proceeding.
