Kitchen Equipment Needed:
- Skillet or frying pan
- Cooking spoon or spatula
- Baking sheet
- Aluminum foil
- Cooking oil for frying
Ingredients:
- 1 pound ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 6 large flour tortillas
- Cooking oil for frying
- Optional toppings: salsa, sour cream, guacamole, diced tomatoes, chopped cilantro
Directions:
- Cook the Beef Filling: In a skillet or frying pan, heat some cooking oil over medium heat. Add the finely chopped onion and minced garlic, and cook until softened, about 2-3 minutes. Add the ground beef and cook until browned, breaking it apart with a spoon or spatula as it cooks. Drain any excess grease from the skillet.
- Season the Beef: Season the cooked beef with chili powder, ground cumin, paprika, salt, and pepper. Stir well to combine and allow the spices to coat the beef evenly. Cook for another 2-3 minutes to allow the flavors to meld together. Remove from heat and set aside.
- Prepare the Chimichangas: Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil and lightly grease it with cooking oil.
- Assemble the Chimichangas: Lay out the flour tortillas on a flat surface. Spoon a generous portion of the seasoned beef mixture onto the center of each tortilla. Sprinkle shredded cheddar cheese and shredded Monterey Jack cheese over the beef filling.
- Fold the Chimichangas: Fold the sides of each tortilla inward, then roll them up tightly to form chimichangas. Place them seam-side down on the prepared baking sheet.
- Bake or Fry the Chimichangas: Brush the chimichangas lightly with cooking oil. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy. Alternatively, you can fry the chimichangas in hot oil until golden brown and crispy on all sides, about 2-3 minutes per side.
- Serve and Enjoy: Once cooked, remove the chimichangas from the oven or skillet and let them cool slightly. Serve hot with your favorite toppings such as salsa, sour cream, guacamole, diced tomatoes, or chopped cilantro. Enjoy the savory goodness of these Beef and Cheese Chimichangas!
