Get ready to tantalize your taste buds with these mouthwatering Beef and Cheese Chimichangas. Packed with seasoned beef, gooey cheese, and wrapped in a crispy tortilla shell, this Tex-Mex classic is sure to become a favorite in your household.

Whether you’re looking for a quick weeknight dinner or a crowd-pleasing party dish, these chimichangas are the perfect choice.

Kitchen Equipment Needed:

  1. Skillet or frying pan
  2. Cooking spoon or spatula
  3. Baking sheet
  4. Aluminum foil
  5. Cooking oil for frying

Ingredients:

  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • Cooking oil for frying
  • Optional toppings: salsa, sour cream, guacamole, diced tomatoes, chopped cilantro

Directions:

  1. Cook the Beef Filling: In a skillet or frying pan, heat some cooking oil over medium heat. Add the finely chopped onion and minced garlic, and cook until softened, about 2-3 minutes. Add the ground beef and cook until browned, breaking it apart with a spoon or spatula as it cooks. Drain any excess grease from the skillet.
  2. Season the Beef: Season the cooked beef with chili powder, ground cumin, paprika, salt, and pepper. Stir well to combine and allow the spices to coat the beef evenly. Cook for another 2-3 minutes to allow the flavors to meld together. Remove from heat and set aside.
  3. Prepare the Chimichangas: Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil and lightly grease it with cooking oil.
  4. Assemble the Chimichangas: Lay out the flour tortillas on a flat surface. Spoon a generous portion of the seasoned beef mixture onto the center of each tortilla. Sprinkle shredded cheddar cheese and shredded Monterey Jack cheese over the beef filling.
  5. Fold the Chimichangas: Fold the sides of each tortilla inward, then roll them up tightly to form chimichangas. Place them seam-side down on the prepared baking sheet.
  6. Bake or Fry the Chimichangas: Brush the chimichangas lightly with cooking oil. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy. Alternatively, you can fry the chimichangas in hot oil until golden brown and crispy on all sides, about 2-3 minutes per side.
