Roasted Garlic-Parmesan Zucchini, Squash, and Tomatoes is a delightfully savory and colorful side dish that’s roasted to perfection with garlic and Parmesan cheese.

It’s not heavy or overly complicated either. I think it’s a perfect summer or harvest dish, and if you’re not a fan of Parmesan, feel free to omit it. It will still be undeniably delicious! If you’re looking for a light & flavorful side that’s not overly heavy, you’ve come to the right place. When you combine fresh zucchini, squash, and tomatoes with a hint of garlic and a sprinkle of Parmesan, you get the perfect dish. The addition of herbs just sends it over the top. I’ve really been in the mood for summer flavors and this roasted vegetable medley reminds me of sunny days and fresh garden produce. Not a fan of Parmesan? Don’t worry, it’s still delicious without it.

Kitchen Equipment Needed

  • Baking sheet
  • Mixing bowl
  • Measuring cups and spoons
  • Knife and cutting board
  • Aluminum foil (optional)
  • Spatula

Ingredients

  • 2 medium zucchini, sliced into rounds
  • 2 medium yellow squash, sliced into rounds
  • 1 pint cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, for garnish (optional)

Directions

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Vegetables:
    • Slice the zucchini and yellow squash into rounds and halve the cherry tomatoes. Place the vegetables in a mixing bowl.
  3. Season the Vegetables:
    • Add the minced garlic, olive oil, dried oregano, dried basil, salt, and pepper to the bowl with the vegetables. Toss to coat evenly.
  4. Arrange on Baking Sheet:
    • Spread the seasoned vegetables in a single layer on a baking sheet lined with aluminum foil for easy cleanup.
  5. Add Parmesan:
    • Sprinkle the grated Parmesan cheese evenly over the vegetables.
  6. Roast the Vegetables:
    • Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly golden.
  7. Serve and Garnish:
    • Remove from the oven and let cool slightly. Garnish with fresh parsley, if desired, and serve.
