Kitchen Equipment Needed:

  1. Mixing bowl
  2. 9×13-inch baking pan
  3. Electric mixer (optional)
  4. Spatula

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained (reserve juice for frosting)

For the Frosting:

  • 1/2 cup unsalted butter
  • 1/2 cup reserved pineapple juice
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Shredded coconut and maraschino cherries for garnish (optional)

Directions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan and set aside.
  2. Prepare the Cake Batter: In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the softened butter, eggs, and vanilla extract. Mix until well combined and smooth. Stir in the crushed pineapple until evenly distributed.
  3. Bake the Cake: Pour the cake batter into the prepared baking pan, spreading it out evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cake cool completely in the pan.
  4. Make the Frosting: In a saucepan, melt the butter over medium heat. Add the reserved pineapple juice and bring to a simmer. Gradually whisk in the powdered sugar until smooth and well combined. Remove from heat and stir in the vanilla extract.
  5. Frost the Cake: Once the cake has cooled, pour the warm frosting over the top, spreading it out evenly with a spatula. Allow the frosting to set before slicing into bars.
  6. Garnish and Serve: If desired, garnish the Pineapple Sheet Cake Bars with shredded coconut and maraschino cherries before serving. Cut into squares or bars, and enjoy!
