Pecan Pie Muffins are delightfully moist and packed with the rich, nutty flavor of pecans, topped with a perfectly sweet crust. They’re not heavy or overly sweet either. I think they’re perfect for any time of the year, and if you’re not a fan of pecans, feel free to substitute with your favorite nuts.

They will still be undeniably delicious! If you’re looking for a light & easy-to-make treat that’s not overly sweet, you’ve come to the right place. When you make these moist and tender muffins and pair them with a warm cup of coffee or tea, you get the perfect snack. The addition of pecans just sends them over the top. I’ve really been in the mood for some homemade comfort, and these dreamy muffins remind me of cozy mornings. Not a fan of pecans? Don’t worry, they’re still delicious with other nuts.

Kitchen Equipment Needed:

  • Muffin tin
  • Paper muffin liners or non-stick cooking spray
  • Large mixing bowl
  • Medium mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Rubber spatula
  • Cooling rack

Ingredients:

  • 1 cup chopped pecans
  • 1 cup brown sugar, packed
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Directions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with non-stick cooking spray.
  2. Mix Dry Ingredients:
    • In a large mixing bowl, combine the chopped pecans, brown sugar, and flour. Stir until well mixed.
  3. Mix Wet Ingredients:
    • In a medium mixing bowl, whisk together the eggs, melted butter, vanilla extract, and salt until well combined.
  4. Combine Ingredients:
    • Pour the wet ingredients into the dry ingredients. Stir with a rubber spatula until just combined, being careful not to overmix.
  5. Fill the Muffin Tin:
    • Evenly distribute the batter among the prepared muffin cups, filling each about two-thirds full.
  6. Bake the Muffins:
    • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Cool the Muffins:
    • Allow the muffins to cool in the tin for about 5 minutes before transferring them to a cooling rack to cool completely.
