Ingredients:
- 4 cups sliced peaches (fresh or canned), drained if using canned
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 12 egg roll wrappers
- 2 tablespoons unsalted butter, melted
- Powdered sugar, for dusting
- Vanilla ice cream or whipped cream, for serving (optional)
Directions:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a large skillet or saucepan, combine the sliced peaches, granulated sugar, ground cinnamon, and cornstarch. Cook over medium heat, stirring occasionally, until the peaches are tender and the mixture is thickened, about 5-7 minutes. Remove from heat and stir in the vanilla extract. Let the peach filling cool slightly.
- Lay out an egg roll wrapper on a clean work surface with one corner pointing towards you. Place a spoonful of the peach filling in the center of the wrapper.
- Fold the bottom corner of the wrapper over the filling, then fold in the side corners. Roll the wrapper tightly towards the top corner, sealing the edge with a small amount of water to secure.
