Peach Cake is a wonderfully moist and fluffy cake studded with juicy peaches and topped with a light dusting of powdered sugar. It’s not heavy or overly sweet, making it a perfect summer dessert. If you’re looking for a delightful cake that’s not too rich, you’ve come to the right place.

When you make a soft and tender cake and pair it with sweet, succulent peaches, you get a perfect balance of flavors. The addition of a hint of vanilla just sends it over the top. Kitchen Equipment Needed:

  • 9-inch round cake pan
  • Mixing bowls
  • Hand mixer or stand mixer
  • Spatula
  • Measuring cups and spoons
  • Whisk
  • Cooling rack

Ingredients:

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 cups fresh peaches, peeled, pitted, and sliced

For Topping:

  • Powdered sugar (optional)

Directions:

  1. Prepare the Pan:
    • Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper. Grease the parchment paper as well.
  2. Make the Batter:
    • In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    • In another bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
    • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
    • Gradually add the flour mixture to the butter mixture, alternating with the sour cream, beginning and ending with the flour mixture. Mix until just combined.
    • Gently fold in the sliced peaches.
  3. Bake the Cake:
    • Pour the batter into the prepared cake pan and spread it evenly with a spatula.
    • Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool in the pan for 10 minutes, then transfer it to a cooling rack to cool completely.
  4. Serve:
    • Once the cake is completely cool, dust the top with powdered sugar if desired. Slice and serve this irresistible Peach Cake as a perfect summer dessert!
