For the Cod:
- 4 cod fillets

Directions
- Prepare the Cod:

- Add the cod fillets to the skillet and cook for about 3-4 minutes on each side, until the fish is opaque and flakes easily with a fork. Remove the cod from the skillet and set aside.
- Make the Sauce:
- In the same skillet, add 1 tablespoon of olive oil and heat over medium heat.
- Add the chopped onion and cook until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another 1 minute until fragrant.
- Stir in the diced tomatoes and their juices, and cook for about 5 minutes to let the flavors meld.
- Pour in the white wine and bring the mixture to a simmer. Let it cook for another 5 minutes to reduce slightly.
- If the sauce is too acidic, add 1 teaspoon of sugar to balance the flavors.
- Season the sauce with salt and black pepper to taste.
- Stir in the chopped fresh basil and cook for another minute.
- Combine and Serve:
- Return the seared cod fillets to the skillet, nestling them into the sauce.
- Spoon some of the sauce over the top of the cod fillets.
- Cook for another 2-3 minutes to heat the fish through and allow the flavors to combine.
- Serve:
- Transfer the cod fillets to serving plates and spoon the white wine tomato basil sauce over the top.
- Garnish with additional fresh basil if desired.
