Pan-Fried Cod with Lemon Butter Sauce is a delightfully light and flaky fish dish that’s topped with a dreamy lemon butter sauce. It’s not heavy or overly rich either. I think it’s a perfect springtime or summer meal, and if you’re not a fan of cod, feel free to use another white fish.

It will still be undeniably delicious! If you’re looking for a light & savory main course that’s not overly heavy, you’ve come to the right place. When you make a lightly fried cod and pair it with a bright and buttery lemon sauce, you get the perfect dish. The addition of fresh herbs just sends it over the top. I’ve really been in the mood for something fresh and light and this dreamy dish reminds me of warm, sunny days. Not a fan of cod? Don’t worry, it’s still delicious with any white fish.

Kitchen Equipment Needed:

  • Large non-stick skillet
  • Small saucepan
  • Mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Tongs
  • Spatula
  • Plate for resting fish
  • Paper towels

Ingredients:

For the Cod:

  • 4 cod fillets (about 6 oz each)
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter

For the Lemon Butter Sauce:

  • 1/4 cup unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 1/4 cup chicken broth or white wine
  • 1 tablespoon capers, drained (optional)
  • Fresh parsley, chopped for garnish

Directions:

  1. Prepare the Cod:
    • Pat the cod fillets dry with paper towels and season both sides with salt and pepper. Dredge the fillets in flour, shaking off any excess.
  2. Heat the Skillet:
    • In a large non-stick skillet, heat the olive oil and butter over medium-high heat until the butter is melted and the mixture is hot.
  3. Cook the Cod:
    • Add the cod fillets to the skillet. Cook for 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Transfer the cooked fish to a plate and keep warm.
  4. Make the Lemon Butter Sauce:
    • In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Stir in the lemon juice, lemon zest, and chicken broth or white wine. Cook for another 2-3 minutes until slightly reduced. Stir in the capers, if using.
  5. Serve:
    • Place the cod fillets on plates and drizzle with the lemon butter sauce. Garnish with chopped fresh parsley.
