Orange Dreamsicle Salad is a delightfully creamy and refreshing dish that’s filled with the bright flavors of orange and the sweetness of marshmallows. It’s not heavy or overly sweet either. I think it’s a perfect summertime or picnic dish, and if you’re not a fan of marshmallows, feel free to omit them.

It will still be undeniably delicious! If you’re looking for a light and airy dessert that’s not overly sweet, you’ve come to the right place. When you combine fluffy whipped topping with tangy orange gelatin and juicy mandarin oranges, you get the perfect salad. The addition of marshmallows just sends it over the top. I’ve really been in the mood for warm weather to arrive, and this dreamy salad reminds me of summer and fun gatherings. Not a fan of marshmallows? Don’t worry, it’s still delicious without them.

Kitchen Equipment Needed:

  • Mixing bowls
  • Whisk
  • Measuring cups and spoons
  • Large spoon or spatula
  • Refrigerator space

Ingredients:

  • 1 (3 oz) package orange gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 (8 oz) container whipped topping (such as Cool Whip), thawed
  • 1 (3.4 oz) package instant vanilla pudding mix
  • 1 (11 oz) can mandarin oranges, drained
  • 2 cups mini marshmallows (optional)
  • 1 cup crushed pineapple, drained

Directions:

  1. Prepare Gelatin:
    • In a mixing bowl, dissolve the orange gelatin in 1 cup of boiling water. Stir until completely dissolved.
    • Add 1 cup of cold water to the gelatin mixture and stir well. Place in the refrigerator and let it cool until it begins to set, but is not fully firm (about 1 hour).
  2. Combine Ingredients:
    • In a large mixing bowl, combine the whipped topping and instant vanilla pudding mix. Mix well until smooth and creamy.
    • Gently fold in the mandarin oranges, crushed pineapple, and mini marshmallows (if using).
  3. Mix in Gelatin:
    • Add the slightly set orange gelatin to the whipped topping mixture. Stir gently until all ingredients are well combined.
  4. Chill:
    • Cover the bowl and refrigerate the salad for at least 2 hours, or until fully set and chilled.
  5. Serve:
    • Before serving, give the salad a gentle stir. Serve chilled and enjoy!
