Kitchen Equipment Needed:

  • Large saucepan
  • Wooden spoon
  • Baking sheet or tray
  • Parchment paper
  • Candy thermometer (optional)
  • Measuring cups and spoons

Ingredients:

  • 2 cups granulated sugar
  • 1 cup evaporated milk
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 3 cups mixed nuts (such as pecans, walnuts, and almonds)
  • 1 cup shredded coconut (optional for garnish)

Directions:

  1. Prepare Baking Sheet: Line a baking sheet or tray with parchment paper and set aside.
  2. Cook Sugar Mixture: In a large saucepan over medium heat, combine the granulated sugar, evaporated milk, and unsalted butter. Stir continuously until the mixture comes to a boil.
  3. Boil and Stir: Once boiling, continue to stir and cook for about 5 minutes. If using a candy thermometer, the mixture should reach the soft-ball stage (235°F – 240°F).
  4. Add Vanilla and Nuts: Remove the saucepan from the heat and stir in the vanilla extract and mixed nuts until the nuts are well-coated with the candy mixture.
  5. Spread Candy: Quickly pour the nut mixture onto the prepared baking sheet, spreading it out evenly with a wooden spoon. Optionally, sprinkle shredded coconut over the top while the candy is still warm.
  6. Cool and Set: Allow the candy to cool completely at room temperature. Once cooled and set, break it into bite-sized pieces.
  7. Store: Store the candy in an airtight container at room temperature.
