When you make soft, fluffy pretzel dough and pair it with melty mozzarella cheese, you get an irresistible combination. These pretzels are a delightful addition to any gathering or simply as a cozy afternoon snack. Not a fan of mozzarella? Don’t worry, you can substitute with any cheese you love!

Kitchen Equipment Needed

  • Large mixing bowl
  • Measuring cups and spoons
  • Baking sheet
  • Parchment paper
  • Saucepan
  • Slotted spoon
  • Tongs
  • Rolling pin
  • Kitchen towel

Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup warm water (110°F)
  • 1 cup warm milk (110°F)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup baking soda
  • 4 cups water
  • 1 egg, beaten (for egg wash)
  • Coarse salt (for sprinkling)

Directions

  1. Prepare the Dough: In a large mixing bowl, combine the warm water, warm milk, sugar, and yeast. Stir and let it sit for about 5 minutes until it becomes frothy.
  2. Mix the Dough: Add the salt and flour to the yeast mixture. Mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  3. Let the Dough Rise: Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 20 minutes until doubled in size.
  4. Prepare the Filling: While the dough is rising, shred the mozzarella cheese and set it aside.
  5. Shape the Pretzels: Preheat your oven to 450°F (230°C). Divide the dough into 8 equal pieces. Roll each piece into a long rope, flatten it slightly, and place a line of shredded mozzarella down the center. Fold the dough over the cheese and pinch the edges to seal.
  6. Form the Pretzels: Shape each piece into a pretzel by forming a U-shape, crossing the ends over each other, and pressing them down onto the bottom of the U.
  7. Prepare the Baking Soda Bath: In a saucepan, bring 4 cups of water to a boil. Add the baking soda carefully (it will bubble up). Using a slotted spoon, dip each pretzel into the boiling water for about 30 seconds, then place them on a parchment-lined baking sheet.
  8. Add the Egg Wash: Brush each pretzel with the beaten egg and sprinkle with coarse salt.
  9. Bake the Pretzels: Bake in the preheated oven for 12-15 minutes until golden brown.
