Kitchen Equipment Needed:
- Medium saucepan
- Mixing spoon
- Measuring cups and spoons
- Oven-safe baking dish or individual ramekins
- Whisk or fork
Ingredients:
- 1 cup long-grain white rice
- 2 cups water
- 4 cups whole milk
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 2 large eggs, lightly beaten
- 1/2 cup raisins (optional)
- Ground nutmeg, for garnish (optional)
Directions:
- In a medium saucepan, combine the white rice and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and tender and the water is absorbed.
- Preheat your oven to 325°F (160°C). Grease an oven-safe baking dish or individual ramekins with butter or cooking spray.
- In the same saucepan used to cook the rice, add the milk, granulated sugar, salt, ground cinnamon, and vanilla extract. Stir well to combine and bring the mixture to a simmer over medium heat.
- Once the milk mixture is simmering, gradually pour a small amount of the hot mixture into the beaten eggs, whisking constantly to temper them. Then, slowly pour the tempered eggs back into the saucepan, whisking constantly to prevent curdling.
- Cook the mixture over medium heat, stirring constantly, for 2-3 minutes, or until slightly thickened. Remove the saucepan from the heat.
- Stir in the cooked rice and raisins (if using) until well combined.
- Pour the rice pudding mixture into the greased baking dish or individual ramekins.
- If desired, sprinkle ground nutmeg over the top of the rice pudding for an extra layer of flavor.
- Bake in the preheated oven for 25-30 minutes, or until the rice pudding is set and lightly golden brown on top.
- Remove from the oven and let the rice pudding cool slightly before serving.
- Serve Mom’s Old Fashioned Rice Pudding warm or chilled, and enjoy the comforting flavors of this timeless dessert!
