Ingredients:
- 1 pound ground beef (or protein of your choice)
- 1 packet taco seasoning mix
- 1/2 cup water
- 8 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/4 cup diced jalapeños (optional)
- 1/4 cup chopped fresh cilantro
- Sour cream, salsa, guacamole, or other desired toppings
Directions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a large skillet over medium heat, cook the ground beef (or protein of your choice) until browned and no longer pink, breaking it apart with a spoon as it cooks.
- Drain any excess grease from the skillet, then add the taco seasoning mix and water to the cooked beef. Stir well to combine, and simmer for 5-7 minutes until the mixture is thickened and flavorful. Remove from heat.
- Lay out the flour tortillas on a clean work surface. Spoon a portion of the seasoned beef mixture onto the center of each tortilla.
- Top the beef mixture with shredded cheddar cheese, diced tomatoes, diced red onion, diced jalapeños (if using), and chopped fresh cilantro.
- Fold the sides of each tortilla over the filling to create a pocket, then place them seam-side down on the prepared baking sheet.
