Honey-Sweetened Lemon Balm Lemonade is a refreshing and delightful beverage that’s infused with the calming flavors of lemon balm and the natural sweetness of honey. It’s not overly tart or overly sweet either. I think it’s a perfect summertime or picnic drink, and if you’re not a fan of lemon balm, feel free to omit it.

It will still be undeniably delicious! If you’re looking for a cool and soothing drink that’s not overly sweet, you’ve come to the right place. When you combine fresh lemon juice with the gentle, herbal notes of lemon balm and sweeten it with honey, you get the perfect lemonade. The addition of lemon balm just sends it over the top. I’ve really been in the mood for refreshing summer drinks and this soothing lemonade reminds me of sunny days and relaxing afternoons. Not a fan of lemon balm? Don’t worry, it’s still delicious without it.

Kitchen Equipment Needed:

  • Medium saucepan
  • Large pitcher
  • Measuring cups and spoons
  • Wooden spoon
  • Citrus juicer
  • Strainer or fine mesh sieve

Ingredients:

  • 4 cups water
  • 1 cup fresh lemon balm leaves, loosely packed
  • 1 cup freshly squeezed lemon juice (about 4-6 lemons)
  • 1/2 to 3/4 cup honey (to taste)
  • Ice cubes
  • Lemon slices and fresh lemon balm sprigs for garnish (optional)

Directions:

  1. Prepare the Lemon Balm Infusion:
    • In a medium saucepan, bring 2 cups of water to a boil. Remove from heat and add the lemon balm leaves. Cover and let steep for 10-15 minutes.
  2. Strain the Infusion:
    • Strain the lemon balm infusion through a fine mesh sieve into a large pitcher, pressing the leaves to extract all the liquid. Discard the leaves.
  3. Add Lemon Juice and Honey:
    • Add the freshly squeezed lemon juice to the pitcher. Stir in the honey, adjusting the amount to your taste preference. Stir until the honey is completely dissolved.
  4. Dilute and Chill:
    • Add the remaining 2 cups of cold water to the pitcher. Stir well to combine. Taste and adjust sweetness if necessary. Chill in the refrigerator for at least 1 hour.
  5. Serve:
    • When ready to serve, fill glasses with ice cubes and pour the lemonade over the ice. Garnish with lemon slices and fresh lemon balm sprigs if desired.
