Kitchen Equipment Needed:

  1. Mixing bowls
  2. Hand or stand mixer
  3. Baking sheets
  4. Parchment paper or silicone baking mats
  5. Food processor or chopping knife (for chopping pecans)
  6. Measuring cups and spoons
  7. Cookie scoop or tablespoon

Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup pecans, finely chopped
  • 1/4 teaspoon salt
  • Additional granulated sugar, for rolling

Directions:

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the vanilla extract to the butter mixture and mix until well combined.
  4. In a separate bowl, whisk together the all-purpose flour and salt.
  5. Gradually add the flour mixture to the butter mixture, mixing until a dough forms.

  10. Using the bottom of a glass or the palm of your hand, gently flatten each dough ball to about 1/2 inch thickness.

  12. Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
