Ingredients:

  • 1 pound ground beef
  • 1 medium onion, diced

Directions:

  1. Cook the Ground Beef:
    • In a large pot or Dutch oven, heat the olive oil (if using) over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until it’s browned and fully cooked. Drain any excess fat if necessary.
  2. Add the Aromatics:
    • Add the diced onion to the pot and cook until it’s soft and translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add the Liquids and Seasonings:
    • Pour in the beef broth, diced tomatoes (with their juice), and tomato sauce. Stir to combine. Add the dried basil, dried oregano, salt, and pepper. Bring the mixture to a boil.
  4. Add the Vegetables and Pasta:
    • Once the soup is boiling, add the frozen mixed vegetables and elbow macaroni. Reduce the heat to a simmer and cook for about 10-12 minutes, or until the macaroni is tender.
