Garlic Scape Pasta is a wonderfully simple yet flavorful dish that’s perfect for any time of the year, especially when garlic scapes are in season. It’s not heavy or overly complicated either. I think it’s a perfect weeknight meal, and if you’re not a fan of garlic scapes, feel free to substitute with another green vegetable.

It will still be undeniably delicious! If you’re looking for a light & aromatic pasta dish that’s not overly rich, you’ve come to the right place. When you sauté garlic scapes with olive oil and toss them with tender pasta, you get a delightful and fragrant meal. The addition of parmesan cheese just sends it over the top. I’ve really been in the mood for fresh and simple meals, and this pasta reminds me of the freshness of a farmer’s market. Not a fan of garlic scapes? Don’t worry, it’s still delicious with your favorite green vegetables.

Kitchen Equipment Needed:

  • Large pot
  • Colander
  • Large skillet
  • Cutting board
  • Knife
  • Tongs

Ingredients:

Pasta:

  • 12 oz spaghetti or linguine
  • 1 bunch garlic scapes (about 8-10 scapes), chopped
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta, reserving 1/2 cup of the pasta water, and set aside.
  2. Prepare the Garlic Scapes:
    • While the pasta is cooking, chop the garlic scapes into 1-inch pieces.
  3. Sauté the Garlic Scapes:
    • In a large skillet, heat the extra-virgin olive oil over medium heat. Add the chopped garlic scapes and sauté for about 5-7 minutes, or until they become tender and fragrant. If using, add the red pepper flakes and sauté for another minute.
  4. Combine Pasta and Garlic Scapes:
    • Add the cooked pasta to the skillet with the garlic scapes. Toss to combine, adding the reserved pasta water a little at a time to create a light sauce. Season with salt and pepper to taste.
  5. Finish the Dish:
    • Remove the skillet from heat and stir in the grated Parmesan cheese and lemon juice. Toss until the pasta is well coated with the sauce.
  6. Serve:
    • Divide the pasta among serving plates. Garnish with chopped fresh parsley and additional Parmesan cheese if desired. Serve immediately and enjoy the fresh, aromatic flavors of this Garlic Scape Pasta.
