Fried Cornbread Fritters are delightfully crispy and golden bites that are perfect for any occasion. They’re not heavy or overly greasy either. I think they make a great side dish or snack, and if you’re not a fan of jalapeños, feel free to omit them. These fritters will still be undeniably delicious! If you’re looking for a crispy and savory treat that’s not overly filling, you’ve come to the right place.

When you make light and fluffy cornbread and fry it into small, golden fritters, you get the perfect snack. The addition of jalapeños just sends it over the top. I’ve really been in the mood for something crispy and these fritters remind me of summertime barbecues. Not a fan of jalapeños? Don’t worry, they’re still delicious without them.

Kitchen Equipment Needed:

  • Large mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Deep frying pan or deep fryer
  • Slotted spoon
  • Paper towels
  • Baking sheet

Ingredients:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 cup canned corn, drained
  • 1/4 cup finely chopped jalapeños (optional)
  • Vegetable oil for frying

Directions:

  1. Preheat Oil:
    • In a deep frying pan or deep fryer, heat vegetable oil to 350°F (175°C).
  2. Mix Dry Ingredients:
    • In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, salt, and baking soda.
  3. Combine Wet Ingredients:
    • In another bowl, whisk together the buttermilk, eggs, and melted butter until well combined.
  4. Combine Mixtures:
    • Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Add Corn and Jalapeños:
    • Fold in the canned corn and finely chopped jalapeños (if using).
  6. Shape Fritters:
    • Using a spoon, scoop the batter and drop it into the hot oil. Fry a few fritters at a time, being careful not to overcrowd the pan.
  7. Fry Fritters:
    • Fry the fritters for 2-3 minutes on each side, or until they are golden brown and crispy.
  8. Drain and Serve:
    • Use a slotted spoon to remove the fritters from the oil and place them on a baking sheet lined with paper towels to drain any excess oil.
