French Coconut Pie is a delightful, easy-to-make pie that’s rich with the tropical flavor of coconut. It’s a perfect dessert for springtime or any special occasion, and even if you’re not a coconut fan, this pie might just change your mind. It’s not overly sweet, but just the right balance to satisfy your sweet tooth. If you’re looking for a light & airy dessert that’s not overly sweet, you’ve come to the right place.

When you make this pie with its tender coconut filling, you get the perfect dessert. The addition of coconut just sends it over the top. I’ve really been in the mood for Spring to arrive and this dreamy pie reminds me of Spring & Easter. Not a fan of coconut? Don’t worry, it’s still delicious without it.

Kitchen Equipment Needed:

  • Mixing bowls
  • Whisk
  • Measuring cups and spoons
  • Pie dish
  • Spatula
  • Oven

Ingredients:

  • 1 unbaked pie crust (9-inch)
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 cup sweetened shredded coconut
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 tsp vanilla extract
  • 1 tbsp all-purpose flour
  • 1/4 tsp salt

Directions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Pie Crust:
    • Place the unbaked pie crust into a 9-inch pie dish. Set aside.
  3. Mix the Filling:
    • In a large mixing bowl, whisk together the sugar, eggs, melted butter, and vanilla extract until smooth and well combined.
    • Add the flour and salt to the mixture, whisking until fully incorporated.
    • Stir in the shredded coconut and milk, mixing until evenly distributed.
  4. Assemble the Pie:
    • Pour the filling mixture into the prepared pie crust, spreading it out evenly with a spatula.
  5. Bake the Pie:
    • Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the filling is set. You can check by inserting a toothpick into the center; it should come out clean.
    • If the edges of the crust start to brown too quickly, cover them with aluminum foil to prevent burning.
  6. Cool and Serve:
    • Remove the pie from the oven and allow it to cool completely on a wire rack before slicing and serving.
