Ingredients

  • 1 lb (450g) chicken breast, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 1 tablespoon vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sriracha sauce (adjust to taste)
  • 1 tablespoon honey
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 green onions, chopped
  • 1 teaspoon cornstarch (optional, for thickening)
  • Cooked rice, for serving

Directions

  1. Prepare the Sauce: In a small bowl, mix together the soy sauce, hoisin sauce, sriracha sauce, honey, minced garlic, and ginger. If you prefer a thicker sauce, dissolve the cornstarch in a tablespoon of water and add it to the sauce mixture. Set aside.
  2. Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breast and cook until it’s browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Stir Fry the Vegetables: In the same skillet, add a little more oil if needed. Add the bell peppers, broccoli, and carrots. Stir fry the vegetables until they are tender-crisp, about 5 minutes.
  4. Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Pour the sauce over the chicken and vegetables. Stir well to coat everything evenly with the sauce. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
