I think they’re a perfect summer or weeknight dinner, and if you’re not a shrimp fan, feel free to substitute with chicken or veggies. It will still be undeniably delicious! Ingredients:

For the Shrimp:

  • 1 lb shrimp, peeled and deveined

  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream
  • 1/2 cup guacamole
  • 1/4 cup salsa

Directions:

  1. Prepare the Shrimp:
    • In a mixing bowl, toss the shrimp with olive oil, chili powder, cumin, paprika, garlic powder, salt, pepper, and lime juice until well coated.
  2. Cook the Shrimp:
    • Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until the shrimp are pink and opaque. Remove from heat and set aside.
  3. Warm the Tortillas:
    • Warm the flour tortillas in a tortilla warmer or microwave until pliable.
  4. Assemble the Burritos:
    • Lay out each tortilla on a flat surface. In the center of each tortilla, layer the rice, black beans, lettuce, tomatoes, red onion, shredded cheese, cooked shrimp, and cilantro.
  5. Add the Toppings:
    • Add a dollop of sour cream, guacamole, and salsa to each burrito.
  6. Fold the Burritos:
    • Fold in the sides of the tortilla, then roll it up from the bottom, tucking in the filling as you go. Ensure the burrito is tightly wrapped.
  7. Serve:
    • Serve the shrimp burritos immediately with extra salsa, sour cream, or guacamole on the side if desired.
