It’s not heavy or overly complicated either. I think it’s a perfect summer or party dish, and if you’re not a fan of beef, feel free to use ground turkey or chicken. Kitchen Equipment Needed:

  • Skillet
  • Large mixing bowl
  • Knife
  • Cutting board
  • Spoon or spatula

Ingredients:

  • 1 pound ground beef (or ground turkey/chicken)
  • 1 packet taco seasoning
  • 1 head of lettuce, chopped
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 2 tomatoes, chopped
  • 1/2 cup chopped green onions
  • 1 large bag of Doritos, crushed
  • 1 bottle (16 ounces) Catalina dressing

Directions:

  1. Cook the Meat:
    • In a skillet over medium heat, cook the ground beef until it is browned. Drain any excess fat.
    • Add the taco seasoning and follow the packet instructions (usually adding some water and simmering until thickened). Remove from heat and let it cool slightly.
  2. Prepare the Vegetables:
    • While the meat is cooking, chop the lettuce, tomatoes, and green onions. Rinse and drain the kidney beans.
  3. Assemble the Salad:
    • In a large mixing bowl, combine the chopped lettuce, kidney beans, shredded cheddar cheese, tomatoes, and green onions.
    • Add the slightly cooled taco meat to the salad mixture and toss to combine.
  4. Add Doritos and Dressing:
    • Just before serving, add the crushed Doritos to the salad and pour the Catalina dressing over the top. Toss gently to combine all ingredients.
