Ingredients:

  • 4 cups bread flour
  • 2 teaspoons active dry yeast
  • 2 teaspoons salt
  • 1 1/2 cups warm water (about 110°F or 45°C)

Directions:

  1. In a mixing bowl, combine the bread flour, active dry yeast, and salt. Mix until well combined.
  2. Gradually add the warm water to the dry ingredients, mixing until a shaggy dough forms.
  3. If using a stand mixer, knead the dough with the dough hook attachment on medium speed for 8 to 10 minutes, or until the dough is smooth and elastic. If kneading by hand, turn the dough out onto a lightly floured surface and knead for 10 to 12 minutes.
  4. Shape the dough into a ball and place it in a lightly greased bowl. Cover with a kitchen towel or plastic wrap and let it rise in a warm, draft-free place for 1 to 2 hours, or until doubled in size.
  5. Once the dough has risen, preheat your oven to 450°F (230°C). If using a baking stone, place it in the oven to preheat as well.
  6. Punch down the dough to release any air bubbles, then turn it out onto a lightly floured surface. Divide the dough in half and shape each half into a round loaf.
  7. Place the loaves onto a baking sheet lined with parchment paper or a lightly floured surface. Cover them loosely with a kitchen towel and let them rise for another 30 to 45 minutes, or until puffy.
  8. Just before baking, use a sharp knife or razor blade to make several shallow slashes across the top of each loaf.
  9. If using a baking stone, carefully transfer the loaves onto the preheated stone. Alternatively, you can bake them directly on the baking sheet.
  10. Place the loaves in the preheated oven and quickly spray the inside of the oven with water using a spray bottle to create steam. This helps to develop a crisp crust.
  11. Bake for 25 to 30 minutes, or until the loaves are golden brown and sound hollow when tapped on the bottom.
  12. Remove the loaves from the oven and let them cool on a wire rack before slicing and serving.
