Gradually whisk in the milk and continue to cook, whisking constantly, until the mixture thickens and starts to bubble, about 5-7 minutes.
- Add the cheeses: Remove the saucepan from heat and stir in the cheddar, mozzarella, and Gruyère cheeses until melted and smooth. Add the Dijon mustard, salt, pepper, and smoked paprika (if using), and stir to combine.
- Combine pasta and sauce: In the large pot, combine the cooked macaroni with the cheese sauce, stirring gently to coat the pasta evenly.
- Prepare the topping: In a small bowl, combine the panko breadcrumbs with the melted butter and grated Parmesan cheese. Mix well to coat the breadcrumbs.
- Assemble the dish: Pour the mac and cheese into a 9×13 inch baking dish. Sprinkle the breadcrumb mixture evenly over the top.
