Corn, Tomato, and Cucumber Salad is a delightfully refreshing and vibrant dish that’s perfect for summer gatherings. It’s light, crisp, and full of fresh flavors. I think it’s a perfect summertime salad, and if you’re not a fan of cucumbers, feel free to omit them. It will still be undeniably delicious!

If you’re looking for a light & refreshing side dish that’s not overly complicated, you’ve come to the right place. When you combine sweet corn, juicy tomatoes, and crunchy cucumbers with a tangy dressing, you get the perfect salad. The addition of fresh herbs just sends it over the top. I’ve really been in the mood for something fresh and vibrant, and this dreamy salad reminds me of summer and outdoor picnics. Not a fan of cucumbers? Don’t worry, it’s still delicious without them.

Kitchen Equipment Needed:

  • Large mixing bowl
  • Knife
  • Cutting board
  • Measuring cups and spoons
  • Mixing spoon

Ingredients:

  • 2 cups fresh or frozen corn kernels (thawed if frozen)
  • 1 pint cherry or grape tomatoes, halved
  • 1 large cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley leaves, chopped
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Directions:

  1. Prepare the Vegetables:
    • If using fresh corn, cook the corn kernels in boiling water for 3-4 minutes until tender, then drain and let cool. If using frozen corn, thaw and drain well.
    • Halve the cherry or grape tomatoes and place them in a large mixing bowl.
    • Dice the cucumber and add it to the bowl with the tomatoes.
    • Finely chop the red onion and add it to the bowl.
  2. Add Fresh Herbs:
    • Chop the fresh basil and parsley leaves and add them to the mixing bowl.
  3. Make the Dressing:
    • In a small bowl or measuring cup, whisk together the olive oil, apple cider vinegar, lemon juice, honey or maple syrup, salt, and pepper.
  4. Combine and Toss:
    • Pour the dressing over the vegetables and herbs in the large mixing bowl.
    • Gently toss everything together until well combined and evenly coated with the dressing.
  5. Serve:
    • Taste and adjust seasoning with additional salt and pepper if needed.
    • Serve immediately or refrigerate for up to 2 hours to allow the flavors to meld before serving.
