Coffee Cake Banana Bread Muffins are a delightfully moist treat that’s topped with a crumbly streusel and a drizzle of glaze. They’re not heavy or overly sweet either. I think they’re a perfect breakfast or brunch option, and if you’re not a fan of nuts, feel free to omit them. They will still be undeniably delicious! If you’re looking for a light & flavorful muffin that’s not overly sweet, you’ve come to the right place. When you make a soft and moist banana bread base and pair it with a cinnamon-sugar streusel topping, you get the perfect muffin.

The addition of a sweet glaze just sends it over the top. I’ve really been in the mood for a comforting treat and these dreamy muffins remind me of cozy mornings and relaxed weekends. Not a fan of nuts? Don’t worry, they’re still delicious without them.

Kitchen Equipment Needed:

  1. Muffin tin
  2. Paper muffin liners
  3. Mixing bowls (large and small)
  4. Whisk
  5. Measuring cups and spoons
  6. Spatula
  7. Fork or pastry cutter (for streusel topping)

Ingredients:

Muffins:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/3 cup unsalted butter, melted
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla extract

Streusel Topping:

  • 1/3 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed
  • 1/4 cup chopped nuts (optional)

Glaze:

  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Directions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.
  2. Mix Dry Ingredients:
    • In a large mixing bowl, whisk together the flour, baking soda, and salt.
  3. Mix Wet Ingredients:
    • In another bowl, combine the mashed bananas, granulated sugar, brown sugar, melted butter, egg, and vanilla extract. Mix well until fully combined.
  4. Combine Wet and Dry Ingredients:
    • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Prepare Streusel Topping:
    • In a small bowl, combine the flour, granulated sugar, brown sugar, and ground cinnamon. Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs. Stir in the nuts if using.
  6. Fill Muffin Tin:
    • Divide the muffin batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle the streusel topping generously over each muffin.
  7. Bake:
    • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Allow muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
  8. Prepare Glaze:
    • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled muffins.
