Kitchen Equipment Needed:

  1. Mixing bowls
  2. Electric mixer (optional)
  3. Baking sheets
  4. Parchment paper or silicone baking mats
  5. Cookie scoop or spoon
  6. Wire cooling rack

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 1 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • Additional granulated sugar, for rolling (optional)

Directions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or silicone baking mats and set aside.
  2. Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy. You can use an electric mixer for this step if desired.
  3. Add Wet Ingredients: Beat in the vegetable oil, eggs, and vanilla extract until well combined.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and cream of tartar.
  5. Mix Everything Together: Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
  6. Shape the Cookies: Using a cookie scoop or spoon, portion the dough and roll it into balls. If desired, roll the balls in additional granulated sugar for a sparkly finish.
  7. Place on Baking Sheets: Arrange the cookie dough balls on the prepared baking sheets, spacing them a few inches apart to allow for spreading.
  8. Bake the Cookies: Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden brown. Be careful not to overbake.
