Cheesy Mashed Potato Puffs are delightfully fluffy bites that are filled with creamy mashed potatoes and melted cheese. They’re not heavy or overly rich either.

I think they’re a perfect appetizer or side dish, and if you’re not a fan of cheese, feel free to omit it. They will still be undeniably delicious! If you’re looking for a light & airy snack that’s not overly indulgent, you’ve come to the right place. When you make fluffy mashed potatoes and bake them into pillowy puffs with cheese, you get the perfect treat. The addition of cheese just sends it over the top. I’ve really been in the mood for something comforting and this delightful dish reminds me of cozy gatherings. Not a fan of cheese? Don’t worry, they’re still delicious without it.

Kitchen Equipment Needed:

  • Mixing bowls
  • Potato masher or ricer
  • Whisk
  • Muffin tin
  • Measuring cups and spoons
  • Spatula

Ingredients:

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1/4 cup sour cream
  • 2 tablespoons chives, chopped
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooking spray or butter for greasing the muffin tin

Directions:

    • In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, eggs, sour cream, chives, garlic powder, salt, and pepper. Mix well until all ingredients are evenly distributed.
  4. Fill the Muffin Tin:
    • Spoon the potato mixture into the prepared muffin tin, filling each cup about 3/4 full. Smooth the tops with a spatula.
  5. Bake the Puffs:
    • Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and the puffs are set.
  6. Cool and Serve:
