This Cheesy Hamburger Potato Casserole is a hearty and comforting dish that’s loaded with layers of seasoned ground beef, tender potatoes, and gooey melted cheese. It’s a family-friendly recipe that’s easy to make and perfect for busy weeknights or potlucks!

Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 large russet potatoes, peeled and thinly sliced
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup mozzarella cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil or butter (for greasing the dish)

Instructions

1. Prepare the Ingredients:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil or butter.
  2. Wash, peel, and slice the potatoes into thin rounds.

2. Cook the Ground Beef:

  1. In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and fully cooked. Drain any excess grease.
  2. Season the beef with paprika, oregano, salt, and pepper. Stir well and set aside.

3. Make the Sauce:

  1. In a bowl, whisk together the cream of mushroom soup and milk until smooth.

4. Assemble the Casserole:

  1. Spread a thin layer of the soup mixture at the bottom of the baking dish.
  2. Arrange a layer of potato slices over the sauce.
  3. Spoon a layer of the cooked ground beef over the potatoes, followed by a sprinkle of cheddar cheese.
  4. Repeat the layers (soup, potatoes, beef, cheese) until all ingredients are used, finishing with a generous layer of cheese on top.

5. Bake the Casserole:

  1. Cover the baking dish with aluminum foil and bake for 45 minutes.
  2. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.

6. Serve and Enjoy:

  1. Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley if desired.
