Cheesy Beef Queso Dip is the ultimate indulgent snack, perfect for parties, game days, or any casual gathering. It’s rich, creamy, and packed with seasoned ground beef and melted cheese for a savory, satisfying flavor.   • Measuring cups and spoons

Ingredients

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 (10 oz) can diced tomatoes with green chilies (drained)
  • 1 cup milk or heavy cream
  • 1 tbsp cornstarch (optional for thickening)
  • Fresh cilantro or green onions for garnish (optional)

Directions

  1. Cook the Beef
    • Heat olive oil in a large skillet over medium heat.
    • Add ground beef, onion, and garlic. Cook until the beef is browned and the onion is softened.
    • Drain excess fat, then stir in chili powder, cumin, smoked paprika, salt, and pepper. Set aside.
  2. Prepare the Cheese Sauce
    • In a medium saucepan, whisk together milk (or heavy cream) and cornstarch over medium heat until slightly thickened.
    • Gradually add cheddar and Monterey Jack cheese, stirring constantly until melted and smooth.
  3. Combine the Ingredients
    • Stir the cooked beef mixture and drained diced tomatoes with green chilies into the cheese sauce. Mix until well combined.
  4. Heat and Serve
    • Cook over low heat for 2-3 minutes, stirring occasionally, until heated through.
    • Transfer to a serving bowl and garnish with cilantro or green onions if desired.
  5. Serve Immediately
    • Enjoy warm with tortilla chips, crackers, or veggie sticks.
