Broccoli Cheese Balls are delightfully crispy bites filled with a savory mixture of broccoli and cheese. They’re not heavy or overly greasy either. I think they’re a perfect appetizer for any gathering or a fun snack for any time of the year, and if you’re not a fan of broccoli, feel free to substitute it with cauliflower.

They will still be undeniably delicious! If you’re looking for a light & crispy appetizer that’s not overly complicated, you’ve come to the right place. When you combine tender broccoli with gooey cheese and a crispy coating, you get the perfect bite-sized treat. The addition of herbs and spices just sends it over the top. I’ve really been in the mood for something crispy and satisfying, and these delightful cheese balls remind me of festive gatherings and happy moments. Not a fan of broccoli? Don’t worry, it’s still delicious with other vegetables.

Kitchen Equipment Needed:

  • Large mixing bowl
  • Medium saucepan or steamer
  • Knife and cutting board
  • Baking sheet
  • Parchment paper
  • Mixing spoon
  • Measuring cups and spoons

Ingredients:

  • 2 cups finely chopped broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plus extra for coating)
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil spray (for baking)

Directions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. Prepare the Broccoli:
    • Steam or boil the broccoli florets until tender, about 5-7 minutes. Drain well and finely chop the cooked broccoli.
  3. Mix the Ingredients:
    • In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, grated Parmesan cheese, breadcrumbs, beaten eggs, garlic powder, onion powder, dried oregano, dried basil, salt, and pepper. Mix until well combined.
  4. Form the Balls:
    • Using your hands, shape the mixture into small balls, about 1-2 inches in diameter. If the mixture is too sticky, add more breadcrumbs as needed.
  5. Coat the Balls:
    • Roll each ball in additional breadcrumbs to coat them evenly.
  6. Bake the Cheese Balls:
    • Place the coated balls on the prepared baking sheet. Lightly spray them with olive oil spray. Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.
  7. Serve:
    • Remove the broccoli cheese balls from the oven and let them cool slightly before serving. Enjoy them warm with your favorite dipping sauce!
