Directions

  1. Prepare the Beef: Season the beef tips with salt and pepper.
  2. Brown the Beef: In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the beef tips and cook until browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.
  3. Cook the Onions and Garlic: In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute.
  4. Add the Mushrooms: Add the sliced mushrooms to the skillet and cook until they release their juices and become golden brown, about 5-6 minutes.
  5. Make the Gravy: Sprinkle the flour over the mushroom mixture and stir to combine. Cook for 1-2 minutes to remove the raw flour taste. Gradually add the beef broth and water, stirring constantly to avoid lumps. Add the Worcestershire sauce and dried thyme. Bring the mixture to a boil, then reduce the heat to a simmer.
  6. Simmer the Beef: Return the browned beef tips to the skillet. Cover and simmer on low heat for 1-1.5 hours, or until the beef is tender and the gravy has thickened.
  7. Finish the Gravy (Optional): For a creamier gravy, stir in the heavy cream during the last 10 minutes of cooking.
