Ingredients:
- 1 lb ground beef
- 1 small onion, chopped

- 1 packet taco seasoning
- 1 can (10 oz) red enchilada sauce

- 2 cups shredded cheddar cheese, divided

Directions:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Cook Beef: In a large skillet over medium heat, cook the ground beef with the chopped onion until the beef is browned and the onion is soft. Add the minced garlic and cook for another minute.
