Directions

  1. Prepare the Chicken:

    • Season the chicken pieces with salt and pepper to taste.
    • Place the cornstarch in a shallow bowl and coat each piece of chicken, shaking off any excess.
    • Dip the coated chicken pieces into the beaten eggs.
  2. Cook the Chicken:
    • Heat the vegetable oil in a large skillet over medium-high heat.
    • Add the chicken pieces to the skillet and cook until they are golden brown on all sides but not cooked through, about 2-3 minutes per side.
    • Remove the chicken pieces from the skillet and place them in a single layer in a baking dish.
  3. Make the Sweet and Sour Sauce:
    • In a mixing bowl, whisk together the sugar, apple cider vinegar, ketchup, soy sauce, garlic powder, onion powder, and ground ginger until well combined.
  4. Bake the Chicken:
    • Pour the sweet and sour sauce evenly over the chicken pieces in the baking dish.
    • Bake the chicken in the preheated oven for 1 hour, stirring the chicken every 15 minutes to ensure it is evenly coated with the sauce.
  5. Serve and Enjoy:
