Ingredients

  • 1.5 lbs (680g) chicken thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 red bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1/2 cup creamy peanut butter
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 2 medium sweet potatoes, peeled and cubed
  • 1 bunch of kale or spinach, chopped
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or bread, for serving

Directions

  1. Brown the Chicken: Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. Sauté Aromatics: In the same pot, add the chopped onion, minced garlic, and ginger. Sauté until the onion is soft and translucent, about 5 minutes.
  3. Add Vegetables and Spices: Add the chopped red bell pepper, cumin, coriander, and cayenne pepper. Stir well and cook for another 2-3 minutes until the spices are fragrant.
  4. Incorporate Liquids: Add the diced tomatoes, chicken broth, peanut butter, and tomato paste to the pot. Stir until the peanut butter is fully incorporated into the liquid.
  5. Cook the Stew: Return the browned chicken to the pot. Add the cubed sweet potatoes. Bring the stew to a boil, then reduce the heat to low and let it simmer for about 25-30 minutes, or until the sweet potatoes are tender and the chicken is cooked through.
  6. Finish with Greens: Stir in the chopped kale or spinach and let it cook for another 5 minutes until the greens are wilted and tender. Season the stew with salt and pepper to taste.
  7. Serve and Garnish: Serve the African Chicken Peanut Stew hot over a bed of cooked rice or with a side of bread. Garnish with fresh cilantro.
