  • 1 pound shrimp, peeled and deveined
  • 1 ripe avocado, diced Opt for ripe avocados for creaminess.
  • 1 cup cherry tomatoes, halved Crisp and bursting with flavor.
  • 1 medium cucumber, diced Adds crunch.
  • 1/4 medium red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  • Rinse the shrimp under cold water and pat them dry with a paper towel. Season with salt and pepper.
  • In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove from heat and let them cool.
  • While the shrimp cool, chop your cucumber, cherry tomatoes, red onion, and avocado into bite-sized pieces.

Assembly

  • In a large bowl, combine the cooled shrimp, diced avocado, cucumber, cherry tomatoes, and red onion.
  • In a small bowl, whisk together the remaining olive oil, lemon juice, salt, and pepper. Pour it over the salad mix.
  • Gently toss everything together until all ingredients are well coated.
  • Finish off with some freshly chopped parsley for garnish.

Notes

For substitutions, consider swapping shrimp for grilled chicken. Store the salad in an airtight container and consume within 1-2 days. Avoid freezing the salad, especially the avocado.
