Dough Ingredients

  • 1 package refrigerated biscuit dough Recommended for ease of preparation.
  • 1 egg for egg wash Beaten for brushing on top.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the shredded chicken, mixed vegetables, cream of chicken soup, dried thyme, salt, and pepper. Stir well until combined.
  • Roll out the refrigerated biscuit dough on a lightly floured surface until about 1/8 inch thick.
  • Use a round cutter or a glass to cut circles from the dough, aiming for 3 inches in diameter.

Assembly

  • Place a tablespoon of the chicken filling in the center of each dough round.
  • Fold the dough over the filling to create a half-moon shape and press the edges to seal. Crimp the edges with a fork for decoration.
  • Beat the egg in a small bowl and brush it over the top of each pie bite.

Baking

  • Place the bites on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
  • Allow to cool for a few minutes before serving warm.

Substitutions like using turkey or a variety of vegetables can enhance the recipe. Keep an eye on baking times as they may vary based on your oven. Avoid overfilling the bites to prevent bursting.
